This has to be one of the most rewarding recipes I’ve tried in a while. In terms of effort & taste, it ticks every box. It’s super easy to make & absolutely delicious – not to mention only 59 calories per brownie!
What you’ll need:
2 cups rolled oats
1 cup raw cashews
1/3 cup cocoa powder
1/4 tsp salt
1 ripe banana
1/4 cup applesauce
1/4 cup chopped walnuts
Pop the oats, cashews dates, cocoa & salt into a food processor. I used my brand new Nutri Ninja to make these & it was so easy!
Once those ingredients have been well & truly blended up, add in the banana & applesauce. It might be a little to thick to blend at this point but you can easily stir the mixture with a metal spoon instead.
Pull out a baking tray & spray it lightly with cooking spray (I love coconut oil for this!). Press the mixture into the pan & flatten off the top with a plastic spatula.
You want to have the mixture nice & flat in the pan, this way all of the little brownies come out perfectly even!
Get your walnuts & sprinkle them liberally over the top of the pan then, using your fingers, press them further into the mixture so they don’t pop back out when you chop the slab into pieces.
Now comes the hard part. You have to leave it in the fridge for a good half hour to firm up. Waiting is the toughest thing! Look at that delicious, chocolatey, fudgey, brownie!^^
Pull out the tray & carefully pop the slab free. Or, if it doesn’t come out easily, cut it into pieces in the tray & lift it gently out with a metal slide. Cut the brownie into 32 pieces & there you have it. The perfect little treat costing only 59 calories! I like to have two little brownies at once for a perfect afternoon pick-me-up that’s only 118 calories! Can I say, winning?!
