Pumpkin, Sage & Goats Cheese Zucchini Pasta {low carb!}

Yum. I love pumpkin. I’ve often said that if I had to eat one food every single day, it could easily be pumpkin (think of the options! Roast pumpkin, pumpkin soup, pumpkin bread, pumpkin pie…). So I wanted to try out a pumpkin sauce for the zucchini pasta I’ve been making almost every second day (seriously, it’s our favourite thing right now – pasta without the carbs? What’s not to love?!). So I put together this recipe & I made it last weekend. It is delicious! Honestly, if you’re a pumpkin lover, stop what you’re doing & make this, you won’t be disappointed!

What you’l need (serves 4):
1/2 large pumpkin or one small pumpkin
8 garlic cloves
Good handful of sage
Drizzle of olive oil
1/2 cup cream
1 cup vegetable stock
4 zucchinis
A few chunks of goat’s cheese

First things first, preheat your oven to 180 degrees Celsius then chop up your pumpkin & place it on a baking dish. Pop the garlic cloves in & sprinkle the sage leaves around. Then drizzle it with a good helping of olive oil & season with salt & pepper.

Bake it for around 45 minutes until it’s all nice & tender! Yum! ^^

Smush the garlic cloves with the bake of a spoon & then puree everything!

Start heating through the pureed pumpkin mixture & while that’s heating up, spiralize your zucchinis. I made this dish just for myself for the first night & then made it for three the next night. The sauce was perfect both nights!

Now add your cream & vegetable stock to the sauce & mix it all in so it’s bubbling nicely.

Now, the next part is up to you. Since I was only making the sauce for one, I scooped out a big spoonful & mixed it in with the zucchini in a glass bowl to warm up the “pasta” since I wasn’t going to be using all of the sauce. If you’re using all of the sauce then simply mix in the “pasta” with the sauce on the cooktop to warm it all up.
