How good does this look? ^^ Gooey, drippy cheese, crispy crust, tons of flavour. What if I told you there’s not a grain in sight? The crust is completely carb-free & this is zero-guilt pizza?

This pizza is utterly delicious, perfectly crispy & guilt-free!
What you’ll need:
2 1/2 cups cauliflower, grated (about 1/2 a large head)
1 large egg, lightly beaten
1 1/4 cups shredded part-skim mozzarella cheese
2 tablespoons grated parmesan cheese
1/4 cup tomato sauce
1/2 capsicum, sliced
1 stick of pepperoni, sliced
1 cup button mushrooms, sliced
Preheat the oven to 215 degrees Celsius & while it’s heating up you can start on your base. Grate or process the cauliflower so it almost resembles breadcrumbs. Mix the egg, one cup of the mozzarella & the parmesan with the cauliflower & then drop spoonfuls onto a lined baking tray in the shape of a large circle. Make sure you keep the layer even & push it out so it starts to look like a pizza base then chuck it in the oven.
Bake it for 15-25 minutes or until it’s golden & crispy & starting to smell delicious!
Now just start to cover it with your pizza toppings like you would a normal pizza base!
Start with tomato sauce, layer a bit of cheese straight over that (so you get lots of delicious melted cheese everywhere), then your capsicums, mushrooms, pepperoni & pineapple. Pop it back into the oven for another 10 minutes so the cheese is melted & the pepperoni has crisped up at the edges.
There you have it. Delicious, thin crispy crust pizza with zero carbs, zero guilt & all of the flavour!
