Healthy Chilli Con Carne

Mmm chilli con carne. Who doesn’t love a big bowl of hearty, filling chilli, am I right? I love this meal so much but I wanted to make it a whole lot healthier so here’s my take on a healthy chilli con carne. This recipe serves 3 very hungry people or 4!

What you’ll need:
1 onion, finely chopped
1 carrot, grated
2 stalks celery, finely sliced
1 teaspoon ground cumin
1 teaspoon paprika
250g beef mince
1 red capsicum, finely chopped
2 Tbsp tomato paste
400g canned crushed tomatoes
400g canned kidney beans
1 punnet cherry tomatoes, quartered
150g (or more!) baby spinach leaves
Handful of dried coriander
1 lime

For the pita chips, you’ll need:
2 pita chips
2 Tbsp olive oil
1/2 teaspoon ground cumin
1/2 teaspoon paprika

Ok first things first. When it comes to cooking I am such a Boy Scout. ‘Being prepared’ are my middle names! So I like to chop up the mirepoix (such a cool word – it’s the chopped mixture you start your sauce with, so in this case it’s the onion, carrot & celery), I like to finely slice the capsicum & measure out the spices before I even turn the cooktop on!

Drizzle a healthy amount of olive oil into your pan & sauté the onion, carrot & celery before adding the spices and mixing them all together. Next up, add the mince & cook it through for about 5 minutes until the mince is browned nicely. Then add the capsicum, tomato paste, canned tomato & kidney beans. Simmer this mixture over a low heat while you make up the pita chips.

Preheat the oven to 200 degrees Celsius. Chop the pita bread into triangles & lay out on a baking tray. Mix up the olive oil with the spices & brush it over the pita bread so the coating is nice & even. Pop them in the oven for around 8 minutes or so, but check them often as they can start to crisp very fast.

Now, while that’s cooking, back to the sauce! Season with salt & pepper & then stir in the cherry tomatoes. Fold in the spinach & coriander just before serving.
