Ok, it doesn’t look like much but this chicken chilli is so delicious & flavourful you honestly won’t want to put it down! Plus it’s super healthy & has way less calories than your regular chilli recipe with tons more good-for-you veggies!

Here’s what you’ll need to make 5 serves (extras for your lunch al desko):
500g chicken mince
2 onions, diced
4 small to medium tomatoes, diced
2 cans of kidney beans
3 capsicums, diced
1 jalapeno, diced (remove the seeds if you don’t want it too hot!)
1 tsp chilli powder
1 tsp cayenne pepper
2 cups vegetable broth

In a large saucepan heat the kidney beans & vegetable broth on low until it simmers nicely.

Add in your chopped tomatoes & spices. Stir it all to make sure the spices are all mixed in.

Meanwhile brown up the chicken mince in a frying pan.

Add the onions & capsicum to the beans, broth & tomato mix.

Then add your jalapeño!

Add the chicken to your mix & stir it in well, making sure to break up any chunks. Cook it all together for another few minutes then remove from the heat.

There you have it! Delicious chicken chilli for a delightfully warming lunch or dinner. What I like to do is eat one for dinner & freeze the rest to take into work – they make the best (& most envy-inducing) work lunches!
