Who doesn’t love a chocolate brownie? I know I do!
When I realised I had to bake three cakes in one night (two for my friend’s birthday party & one to take up on my weekend trip to visit a friend in the country) I’ll admit, I wanted to make things a little easier on myself!
I chose to make two batches of this delicious chocolate brownie cake & boy is it tasty! It’s basically just a big brownie but it’s easy & delicious & crowd-pleasing!
What you’ll need:
1 cup sugar
2 eggs, lightly beaten
1 tsp vanilla extract
1/8 tsp salt
3/4 cup plain flour
125g dark chocolate
First up, preheat the oven to 180°C & grease an 8 inch cake tin (I actually used a loose bottomed tin & a glass baking dish). Using an electric mixer beat the butter for about 1 minute then add the sugar & beat until well blended. Add the eggs & vanilla & beat until blended. Finally add the salt & 1/3 of the flour, beating until combined. Add the rest of the flour in 2 additions, mixing well after each addition.
Set up a double boiler on the stove & melt the dark chocolate. Once it’s melted, remove it from the heat & let it cool for about 2 to 3 minutes before mixing in with the rest of the batter. Pour the batter into the prepared tin.
Bake until a toothpick inserted into the middle comes out clean, around 20 to 25 minutes. Then, if you’re planning on taking a proper picture, take it before you taste the cake. Because, once we got stuck in, I realised the only photo of the finished product was this Instagram snap!
Either way, it was a definite success! This cake is super duper easy & is such a crowd pleaser you’ll be hard pressed to get a slice yourself!
