How good do these babies look? If you’re like me you’re craving a snack come 11:30am or 3pm in between the main meals of the day. Well, here is your answer. This little bar is seriously tasty & so, so filling. You’re all going to love it! Plus, all you have to do is blend it & bake it. Nothing else. Not even joking!
What you’ll need (to make 12 bars):
2 cups oats
1 cup almonds
2 scoops vanilla protein powder (Optional but really keeps you full!)
1 cup fresh or frozen blueberries
1/2 cup pitted dates
1/2 cup maple syrup
First of all preheat your oven to 180 degrees Celsius then layer into your food processor 1 cup of the oats, the almonds & protein powder, blend until they’re all combined. Add the dates & process again.
Pour the maple syrup & mix it in with the dry ingredients before you blend again (this recipe does involve a lot of blending!).
Finally add the blueberries & the second cup of oats & blend it all up together. It’ll turn a bit of a strange brown-purple colour but don’t worry, I promise it tastes delicious in the end!
Press it all down into a lined baking tray & pop it into the oven for around 20-25 minutes or until it’s relatively firm to the touch. Pull it out of the oven & as quick as you can – being very careful! – pull it out of the baking tray to cool on a wire rack. Then chop up into pieces.
